Salmon Fettuccine Alfredo

This creamy salmon pasta dish is packed with flavors. No matter if it’s a casual or a fancy dinner party, it’s always super-fast, easy and delicious. If you happened to have baked or grilled leftover salmon feel free to substitute. Also you can use your favorite pasta shape.

12 oz. fresh fettuccini pasta
2 Tbsp. olive oil
1 1/2 cup heavy cream
1 lb.  Fresh salmon fillet, boneless, skinless
1/2 cup freshly grated Parmesan cheese
2 cloves garlic, crushed
Salt and pepper, to taste
1/8 tsp. Nutmeg- grated
Fresh dill for garnish
Salmon caviar for garnish (optional)
Cut salmon fillet in to 1 inch squares and lightly sprinkle with salt and pepper. Add oil into large sauté pan over medium heat add salmon and garlic; sauté for 3 minutes. Add cream; reduce heat to low, stir in salt, pepper, nutmeg and Parmesan cheese. Cook stirring constantly for 7-8 minutes or until sauce is thickened and salmon is cooked.
In a large pot bring lightly salted water to boil. Add fettuccini pasta and cook for 2-3 minutes (if using dry fettuccini cook for 9-10 minutes).
Place drained pasta to serving bowl; pour the sauce with fish over the pasta, sprinkle with fresh dill and garnish with Salmon Caviar.
Serve immediately.
